Per equivalent adult (children under 12 count as half): 1.5 lb whole turkey (plus 30% if you want leftovers), 0.25 lb (4 oz) stuffing, 0.33 lb (about 150 g) potatoes, 3.5 oz veggie sides, 2 fl oz cranberry sauce, 2 oz cheese, 7 pieces of appetizers, and one 9-inch pie per 6 people. Dinner rolls are 2 per adult and 1 per child; wine is 0.71 liters (about 24 fl oz) per adult, and children are not counted for wine.
We subtract backwards from your dinner time: first pull the bird 45 minutes early to rest; before that, roast at 325 °F following the USDA weight timetable (about 13 minutes per pound for a 20+ lb bird, up to 22 minutes per pound for small birds); and before that, fridge-thaw at one day per 4 lbs. The result is the exact date and time to move your turkey into the fridge.
